Sweet Potatoes
This distant cousin of the regular potato is a great addition to the garden. They are very tasty and are much sweeter than potatoes. Their orange colored flesh is a reflection of their high levels of beta carotene. These should be planted later than a lot of other spring crops. They also serve as a great cover crop during the high heat during the summer months. Plant them from early April until early July.
