Lettuce
Lettuce is available in many varieties and is equally as versatile in the kitchen. Eat it raw on sandwiches, in salads or sautee it slightly as you would with spinach or other light greens. A whole range of flavors and textures can be found as well. Plant most varieties before the end of February and expect to wait more than two months for mature plants. Some varieties however, are very tasty before they mature fully and are great for light salads.
