Eggplant

Eggplants grow well in Louisiana started from seeds outdoors as early as January. The sub-tropical climate allows them a full outdoor life cycle where places further north will need to start them indoors. Eggplants are very high in folic acid and potassium, two very important nutritional elements. Try cooking some cultural cuisines such as Indian or Italian using eggplants.
